The original recipe is from Jamie Oliver from his 15 minute meals cookbook. I’ve adapted it more out of convenience than anything else. Some of the ingredients are not always easy to find. This is definitely one of my favorites!



Cajun Chicken + Sweet Potato Mash

  1. Cajun Chicken
  2. 4 x 120 gram chicken breasts
  3. 1 tbsp cajun seasoning
  4. 1 tbsp polenta
  5. olive oil
  6. smoked bacon (I used around 8 slices
  7. 175 grams okra – I used green beans because okra is hard to find where I live
  8. 20 grams feta cheese (optional)
  9. salt
  10. Salsa
  11. 4 corn on the cob
  12. fresh coriander (optional – I know longer add it because I find it to overbearing)
  13. 1 fresh red chilli
  14. 4 spring onions
  15. 3 vine ripened tomatoes
  16. 2 limes
  17. 1 tbsp extra virgin olive oil
  18. pinch of sea salt
  19. Sweet Potato Mash
  20. 800 grams sweet potatoes (washed)
  21. 2 tbsp sweet chilli sauce
  1. This recipe is designed to be ready quickly. That is why the directions are for the entire meal in the order you should cook. It takes me around 20 minutes to make.
  2. To prepare -> boil water in a kettle / get out your ingredients / get your food processor out / get out a large lidded pan / large frying pan / grease proof paper / rolling pin
  3. Grill the corn until charred.
  4. Remove any nasty looking pieces from the potatoes, then finely slice them in a food processor.
  5. Put the sweet potatoes into a large pan, then just cover with boiling salted water and the lid.
  6. If you’ve chosen green beans instead of okra, cut the beans and place them in a bowl of hot water. (or steam them for a few minutes, if you don’t they’ll be too hard later)
  7. On a large sheet of greaseproof paper, toss the chicken with salt, cajun seasoning and polenta.
  8. Fold over the paper, then bash and flatten the chicken to around 1.5 cm thick with a rolling pin.
  9. Put the chicken into the frying pan with 2 tablespoons of olive oil, turning after 3 or 4 minutes, until cooked through.
  10. Drain the cooked sweet potatoes, return to the pan and mash with the sweet chilli sauce, cover and leave on a very low heat.
  11. Add the bacon to the frying pan. As soon as the bacon starts to crisp up, add the okra to the pan. Or if you went for the green beans as I did add them now.
  12. Cut of the corn kernels and put them into a bowl.
  13. Roughly chop the coriander and add to the corn.
  14. Finely slice the chili and trimmed spring onions, chop the tomatoes, and add to the bowl with a pinch of sea salt, the lime juice and olive oil, then mix well.
  15. Serve the sweet potato smash on a board or platter with the chicken and beans. Crumble if desired over some feta, and serve with the salsa on the side.
